So far, the cookie recipes have been very good. Most of them have
come out about the same as those asking for butter. I think some recipes use too much sugar, so I cut it back a little. I always use whole wheat and sometimes add flaxseed meal as well.

I wanted to let you know, my family is a HUGE fan of the Tollhouse chocolate chip cookie. In fact I make them about once a week! So the Sunday of Conf. I decided to make them with your recipe. Not one person in my family could tell the difference!!! Maybe next time I will do all olive oil with the butter extract.

Improving health while at the same time enjoying delicious desserts is almost unheard of! After reading "Olive Desserts," I was amazed at the array of great desserts that can be made, replacing fat laden butter with olive oil. For some time now, I have been seeking a replacement for butter so that I did not have to give up dessert, especially chocolate. Eureka, I have found it! Having tried some of the recipes, I am literally overjoyed! Micki Sannar's book has shown me the way to continue to enjoy great desserts without compromising my health. This book is a must for every kitchen.

I was very sceptical about making desserts with olive oil. I thought, "how could cakes and cookies taste good without butter or shortning?" A friend of mine made me the Macadamia Nut Crunchers and I was totally amazed at the taste and texture of the cookies. I got the cook book for myself and started making desserts for my family and friends. I have been getting requests now for Comfort Cake and Chocolate Sin. It's a great feeling to be able to serve the people I love desserts that are made with heart healthy olive oil.
