I love this series and own all of them. The dishes are EPIC but one the recipe twice before beginning. Some are not paint by numbers and you need to figure it out a little bit but its not hard.
Some great recipes beautifully and simple to follow. Would prefer this series if there were less recipes involving offal and things that are not available or are too expensive for the average wannabe chef.
This book's got many very interesting recipies and I've learned and discovered a number of great techniques and new ways to use ingredients. All the recipies I've tried have turned out really well.

However, and this is why it only gets 3 stars, there is very little step by step instruction on how to procede. You really need to know your basic cooking techniques and have enough experience in the kitchen to successfully work out what the steps they left out should be. It takes me a few readings of the recipies and a bit of thinking before I feel I know how to procede. That being said once you've understood the recipies they are almost all quite straight forward and only a few of them are overly complex.

Now you don't have to be a professional cook to use this book, but it's not for beginers or for people who need detailed step by step instructions. If however you have a bit of cooking experience and are willing to put in a bit of effort you'll get a number great proffesional recipies from top european chef to add to your cooking arsenal.
This book is not for beginners--it is an Industry book by Industry people. If you're aspiring to Rule your Kitchen, or to Rule a Kitchen and get Paid for it, it's a must have, right along side of Escoffier.

This book, along with the rest of the Eurodelices series, is a must have for all aspiring Chefs out there, even those who have reached the top wouldn't harm them to get these books.
